Have fun with Lettuce Wraps

This is my favorite recipe for lettuce wraps. Feel free to modify the ingredients for a variety of tastes. You can also use collard greens in place of lettuce.


• 2 very ripe avocados • 1 tomato, diced • 1 carrot, shredded • 1 beet, shredded • 1/2 jalapeno pepper, diced • 1/2 red onion, diced • 3 cloves fresh garlic, minced • 1/4 cup fresh cilantro, chopped • kernels from one ear raw organic corn • 2 tsp fresh lime juice• 1 tsp nama shoyu • 1 tsp agave nectar• 6-8 large romaine lettuce leaves

PREPARATION:In a large bowl, mash the avocado. Add remaining ingredients and stir until well mixed. Spread 2-3 tablespoons of this mixture onto lettuce leaves and wrap. Enjoy!

You can also use shredded Jicama, zucchini, cucumber, dicon, sprouts, etc... you can also add to that tahini, tofu sour cream, olive oil and vinegar, nut cheese sauce etc...

As you can see these are simple and great tasting appetizers or lunch. Even children tend love love making and eating them. You can keep changing the ingredients for a variety of tastes. Have fun!!
