Cranberry Corn Relish

Take some of the pressure off last-minute preparation with this no-cook relish, which can be prepared up to two days ahead. Serve with you favorite tofu or seitan dish


1/4 cup diced red onion

2 tablespoons minced fresh cilantro

1 (16-ounce) can whole-berry cranberry sauce

1 (15.25-ounce) can whole-kernel corn, drained

1 (4.5-ounce) can chopped green chilies

INSTRUCTIONS1. Combine all ingredients in a small bowl. Cover and chill at least 30 minutes.
