Chickpea Sheera - a great dessert recipe from India

A typical sheera recipe is made from cream of wheat. This chickpea sheera is a high protein version of this common Indian dessert recipe.

1 cup dried chickpeas (chana dal)

1/2 cup Agave Nectar (to taste)

3 tbsp olive oil

1 cup soy milk

1/4 cup raisins

1/4 cup slivered almonds

1/4 cup cashew pieces

1/2 teaspoon ground cardamom

pinch of saffron

pinch of freshly grated nutmeg

Soak chickpeas in water for 4 hours. Grind it in vitamix. In a large flat skillet on medium high, heat the olive oil and add the ground . Keep stirring continuously so as not to burn until the chickpea turns light brown in color and a nutty fragrance is emitted. Also, add the raisins. This may take up to 5-6 minutes. Simultaneously on another burner, in a saucepan on medium, gently bring the soy milk to a low boil. Add the agave nectar and saffron and let steep for 5 minutes. Add the warmed saffron milk slowly, while stirring, to the ground chickpea mixture, so as not to form any lumps. Stir to combine well, reduce the heat to low, stir continuously for 5-7 minutes. Stir and add the nuts, freshly grated nutmeg and cardamom. Cover and let cook for an additional 5 minutes. Serve immediately and enjoy the sheera!
