Gourmet Beet Ravioli Recipe

Beet Ravioli with nut cheese filling. This is a great looking dish that is delicious and liked even by some one trying raw food for the first time. This was also a very popular dish in our restaurant.


For Nut Cheese Filling:

1/2 Cup cashews

1/2 Cup macadamia nuts

1 Tbs Bragg's Liquid Aminos or Nama Shoyu

1 Tbs lemon juice

1/2 Tbs agave nectar

2 cloves garlic

1/4 cup fresh parsley

1/4 cup water

1/4 cup nutritional yeast

Handful of fresh basil leaves

For Ravioli: Peeled and thinly sliced beets

Preparation:Place the nut cheese ingredients in a food processor and blend until smooth doughy consistency.

Mandolin-slice beets to a very very thin width.

Spoon your "cheese" filling onto one slice and top with a second. Garnish as desired Yellow pepper and pine-nut sauce, crushed pistachios etc... Serve immediately.
